To surprise you: Interdonato lemon essential oil.
Interdonato has a short harvest period in December with part of the zest still green. This Sicilian lemon (Province of Messina) has benefited from a PDO (protected designation of origin) since 2009. It is sold as fresh fruit, the extraction of essential oil is almost non-existent.
Its taste is remarkably distinctive and the composition of the essential oil is as well. Natural product research, 1478-6427, 2016 Jul, Vol. 30). We know that it is perfectly suited to Ceylon black tea. For 3 generations, it has been the lemon used in the 4 o'clock tea of the British monarchy (Lemon used in the tea of Queen Elizabeth and Charles III).
An essential oil that is unobtainable is extracted from Interdonato. direct from the tree. I put a drop on my tea before pouring the water at 85° for 5 minutes of infusion ...and then I am at Birkhall, where the water from Balmoral Castle makes a perfectly aromatic tea with this lemony addition which does not change the taste of the tea but adds a subtle elegance ... almost royal.
