The flower of Citrus hanaju (the hanayuzu or yuzu flower) has a discreet fragrance. Pour into an bowl warm green tea, or hot sake, or even a dashi broth, a vegetable and mushroom broth. Place 3 hanayuzu flower buds on the hot liquid. They open with the heat and release a strong scent of spring that rises in the air. Amazing.
